Scottish Food & Drink Fortnight Recipe 2 - Macaroni Cheese
For our 2nd Scottish Food & Drink Fortnight Recipe we've gone for a family favourite - macaroni cheese!
Our family recipe has an interesting twist in the form of a crispy topping, created by using our Crispy Bacon Potato Crisps!
225g dried Macaroni
45g plain flour
275g grated mature cheddar cheese
50g grated parmesan cheese
1 x 150g packet of Mackie’s crispy bacon crisps, crushed
Cook the Macaroni as per packet instructions and drain.
Melt the butter in a saucepan, add the flour and stir in well to a smooth paste. Gradually add the milk and cook until the mixture boils and thickens, finally add the cheeses and season with salt & pepper.
Mix the Macaroni with the sauce and pour into an ovenproof baker and cover with the scrunched up Mackie's crisps. Bake at 180°c for 20 mins, until browned and bubbling.
