Crisp-topped Fish Pie
Here's our Fish Pie recipe - a great one to try this weekend for a dinner party with friends!
700g haddock, cod or other white fish
700g smoked haddock
1.1 litres of milk
75g plain flour
50g grated cheddar cheese
2 hard boiled eggs, shelled and chopped
1 tablespoon of chopped parsley
1 x 150g bag of Mackie’s Tangy Tomato Crisps, crushed
Put the fish, onion and milk in a pan and bring slowly to the boil, draw off the heat and leave to cool with the lid on.
When cooled, strain the milk into a jug and throw away the onion. Flake the fish, but not too small.
Melt the butter in a saucepan and stir in the flour. Then gradually add the reserved milk, stirring all the time. Return to the heat, stirring until it boils and thickens. Stir in the cheese, fish and hard boiled eggs, mixing carefully and then season to taste.
Place the mixture in a shallow serving dish and scatter thickly with the scrunched up Mackie’s crisps.
Bake at 180°c for about 20 minutes, until bubbling and browned on top. Enjoy with a salad, baked potato or just peas!
